The behavior you are seeing is because the switch you are using is completely disconnecting the signal from the Mac so macOS assumes rightly so that they monitor is gone and it needs to consolidate the windows. This usb adapter will get you there, but I wouldn't do any serious gaming or graphics with it. I run a lesser resolution one for a third monitor and it works pretty good.
Mac mini (2011) Dual Monitors Setup
The one I have is a lesser usb 2 model. I wouldn't say it has a lag or delay, what I see is just a tad of a stutter when dragging windows around, almost like a remote connection but barely noticeable. I just played a youtube HD video full screen and it played fine. I believe it will use the CPU, so performance will probably very depending on the computer as well.
